Notes from the Producer

Fermentation was in a combination of open top and static fermenters.  Average fermentation time was 14 days.  The wines were tank pressed and pressing was light.  All wines were aged on yeasts solids prior to racking.

Varietal: 100% Shiraz
Vineyard: From the Foothills of Willunga and the floor of the Vale
Oak: Very fined grained American hogsheads, 50% newColor: Medium purple with red brick hues
Bouquet: Lifted plum with hints of violet with oak complexes of vanilla and hints of cinnamon.
Palate: Bright red berry flavours coupled with powdery grape tannins elongated the length of the palate.

As the hilarious label says, ‘Hear No Evil, See No Evil, Taste No Evil.’
A saturated ruby/purple color is accompanied by aromas and
flavors of blackberries and licorice in this medium to full-bodied,
classic Australian fruit bomb. Pure, ripe, and undeniably delicious,
it should be enjoyed over the next 1-3 year
s.

Talking About the 2004 Vintage (90 points)

Full ruby. Black raspberry and cherry preserve aromas
are complicated by star anise and a subtle
floral quality. Soft, silky and round, with nicely concentrated
dark berry preserve flavors, gentle tannins
and appealing sweetness.
