Producer Notes

Lusciousness is the name of the game for this wine, and it delivers in spades. Bright aromas of raspberry jam and black cherry are the focal point of the flavors, but it carries with it lots of baking spice, vanilla and a hint of cocoa. The wine is positively unctuous on the palate with a texture like molten chocolate and a long, lingering finish.

FERMENTATION / AGING:
We knew from the get go that we wouldn’t have any trouble extracting tannin with these lots. We fermented relatively cool to soften extraction and retain some of the bright aromatics then inoculated for malolactic fermentation [done in many commercial wines] shortly after pressing to give the wine a suave, soft mouth-feel. Finally, when the wine was stable, we matched our Petite Sirah lots to specific oak programs to give the wine added richness and accentuate the bright punch of fruit we had gotten out of it.

FOOD PAIRING:
Texas-style Beef Brisket, Pulled-Pork Sliders with Garlic Aioli, Grilled Ribeye with soy marinade, Wood-fired oven pizza with prosciutto and arugula.

Forget it.  No, don’t! Remember it!  Deep, rich, purple, and luxuriating, this wine is a steal at $15.  The producer’s notes tell the story, but a glass of it, sitting in front of a nice fire on a winter’s night, or (heck) taking in a burger and fries, leaves you in awe of how this wine bends around whatever you’re doing.  Get a bottle, or two.
