Vinification
Nobilo Regional Collection wines represent the unique and diverse qualities of our vineyard sites throughout New Zealand.
New Zealand enjoyed a particularly long, dry summer in 2008. Favorable weather patterns throughout flowering and fruit set provided good crop quantities, with drought conditions ensuring superior ripening and flavor development throughout all grape growing regions.
The grapes for our Pinot Noir come from select cool climate vineyards in the Marlborough sub regions of Wairau and Awatere Valley’s. A variety of clones and rootstock, along with a mixture of soils and micro-climates ensure a balance of fruit flavour and exceptional quality. The grapes were all machine harvested in the cool of night or early morning to optimise fruit quality.
Cold soaked for four days (at 10 degrees) the wine was then inoculated with a mixture of cultured and wild yeast for a 5-8 day ferment. Malolactic fermentation was completed in tank before the wine was aged in French oak barrels.
