Chardonnay — 90%
Viognier — 10%

Quintessential South African varietals have been herded together to compliment each other in taste and structure. The use of oak in the production of Herding Cats wines is minimized so the fruit flavors of South Africa predominates. Having the right amount of skin contact extracts flavor. A great wine has structure, low tannin and by leaving the wine to age in barrels for the optimal amount of time prevents overpowering the delicate flavor of the fruit. Smooth palate of pear, peach and floral notes. Crisp acidity yet soft finish.

After crushing, grapes were left on skins for 6 to 10 hours and then pressed. Fermentation temperatures were kept cool to retain fresh and vibrant fruit flavors. Food Pairing: The cool crisp flavors of the chardonnay and the sweet aromas of the viognier makes this the perfect accompaniment to Seared Wasabi Ahi Tuna.
